after doing some school work at home this afternoon..  i suddenly felt motivated to embark on another kitchen experiment - "cheese-topped baked chicken".. the whole thing was not planned.. it just came together while i was scrounging for ingredients that might mesh well together.. the finished product was not too bad either (this sounds a bit self-congratulatory).. which was a good thing since i did not have lunch and i was looking forward to a big dinner..

 

my "recipe"..

for the marinade.. olive oil.. water.. salt and ground black pepper..  garlic and onions..  bay leaves.. knorr seasoning.. preparation.. marinade the chicken breasts.. place onion slices on top of chicken pieces.. sprinkle mozzarella cheese on top of chicken.. place baby corn pieces in with the marinade.. bake for 40 minutes..

i am starting to feel sorry for all the chickens who sacrificed their lives to be my guinea pigs.. might try something else using beef or pork next time..
